Extremely long fermentation times with natural yeasts, followed by years of aging, result in some awesome, unique expressions of Piemontese varieties. Brickish in color, with natural funk, it delivers red fruit, earthy olives, and herbaceous spice. Firm tannins are balanced by spritzy acidity, making this wine a reward for the adventurous. Serving Suggestions: Pizza w/ olive oil, garlic, roasted red peppers, & finocchiona salami. Creamy porcini mushroom risotto w/ rosemary, thyme, Parmigiano Reggiano, & chopped chives.
