Former pianist Giuseppe Russo cultivates his Nerello Mascalese vines in the black soil on the northern slopes of Sicily’s active volcano, Mount Etna. A combination of hot, sunny, dry summer days and cool, refreshingly breezy summer nights bring out the best of his old vines. Dry and elegant, evocative of Provence rosé, but trading wild herbs for intriguing mineral flavors and just the barest hint of ash. Active volcano, remember.
Serving suggestion: Penne tossed with butter, tapenade, anchovy, Parmigiano Reggiano, fresh parsley & fresh mozzarella. Summer vegetable soup w/ a drizzle of extra virgin olive oil.
