Nero d’Avola, aka Calabrese, is Sicily’s most widely planted grape, but is also grown throughout lower Italy. Known for its ripe fruit flavors, as well as for being complex, earthy, and raisiny, its charm can often be crushed by the regional heat that can turn the sugary grapes into harsh wines. COS harvests these grapes before they get too ripe, cautiously crafting them into a far more vibrant, elegant version.
Serving Suggestions: Charcoal-grilled lamb crusted w/ rosemary, garlic & lemon. Charred, chopped Romaine or kale w/ Pecorino, fried capers, artichoke, & red onion.
