This charming cépage is aptly named after the patron saint of animals, bees, and biodiversity; the Saint Ambroise is a breath of fresh air and springtime in a glass. Fermentation in concrete tanks allow this wine to sing true to its fruit, displaying firm red fruit up front, with late summer blackberries meeting us at the palate, and subtle breezy dried florals, peppery tobacco whispers, and a flourish of fresh bee pollen guide you gently to a greening meadow so you can frolic, glass in hand. Serving Suggestion: Grilled chicken thighs & maple-dijon brussels sprouts. Harissa lentil burgers w/tahini sauce, aragula, avocado, red onion, and feta. Roasted wild boar w/sage and honey.
