Indulgently rich yet with classically Chablis-ish freshness and chiseled structure, the Fourneaux is a premier cru for both the connoisseur and the equal-opportunity seeker of sheer deliciousness. Hailing from a plot of Cyril Gautheron’s vineyards whose textbook Kimmeridgian chalk shares its composition with ripeness-bolstering clay, this glimmering gem is a bit on the more full-figured side of Chablis but isn’t trying anything remotely “new world” on for size.
