Quercus Ilex is the holly oak, found plentifully at the Caprili winery and a symbol of Montalcino. Structured, aromatic, exuding youthful black fruit, and earthy, this wine is made from Sangiovese Grosso, a famed local clone of Brunello. While this youthful outing isn’t likely to be mistaken for Brunello, it’s still impressive stuff. Grown organically and vinified utilizing only ambient and indigenous yeasts, this a fantastic value.
Serving Suggestion: Lamb ragu w/ mushrooms & sun-dried tomatoes. Eggplant-stuffed portobello mushrooms w/ garlic, basil & parmesan. Lasagna.
