Tabarrini is a well-known and respected artisan winery in Montefalco, producing some high quality Sagrantino as well as exciting whites like this one! This wine takes its name from Giampaolo’s grandfather, Adarmando Tabarrini, and the grapes come from free-standing 60+ year old Trebbiano Spoletino vines that were cultivated by Giampaolo’s uncle Ziesu back in the day, aged 12 months in stainless steel and another 9 months in bottle. This is a wild beast of a wine, complex and expansive, savory and undeniably unique!
Serving Suggestion: Roasted wild mushroom pappardelle. Miso maple glazed salmon. Saffron risotto w/ butternut squash.
