Grown in manganese-rich, granitic sands called “gorrhe,” fermented in enormous wooden tanks with roughly half of the grapes left in whole clusters, Perdrizière evokes that garden you’ve been dreaming of planting. More delicate and floral than other Sérol cepages, redolent of berries, roses, and mint, it carries a faint undercurrent of soy and cracked black pepper, braced by the lightest of tannins.
Serving Suggestions: The lighter side of cuisine de bonne maman or the offerings at your “local” bistro / bouchon (Chez vous?). Poached salmon w/ sorrel sauce, blanquette de veau, roast chicken & beet salad.
