Oudan is the first vineyard Stéphane Sérol laid out and planted himself. With a southern exposure, high-density planting on granitic soils, and low yields, the Gamay-based wines of this vineyard (there’s actually a bit of Viognier as well!) attain an elegance to rival fine Burgundy. Opening with spicy notes of red pepper, then whole grape clusters and currants, the darkest of fruits follow, wrapped in a cooling hit of spearmint.
Serving Suggestion: Roast squab or quail w/ glazed carrots. Venison tenderloin in mustard sauce. Sauteed chanterelles.
