Weissburgunder (more familiar as Pinot Blanc or Pinot Bianco) is the most porcelain-esque of Pinot’s pigmentary variants; not only are its grapes the pale green of a typical white (unlike those of the oddly copper-toned Pinot Gris), but the wines made from it are frequently subtle and soft-spoken. On a short list of varieties that Paul Direder has elected to cultivate, it here occupies the riper end of its spectrum – tropical whispers ribboning a classically orchard-ish, citrusy profile with pinpricks of mineral and almond.
Serving Suggestions: Crisp-skinned drumsticks roasted w/ lemon, thyme, rosemary, & garlic. Singapore noodles w/ pan-seared tofu, bell peppers, & onion.
