Leydet-Valentin’s vineyard borders Chateau Cheval Blanc, perhaps the most expensive and ostentatious St. Emilion producer ever. This wine is fermented and aged on the lees in French oak barrels for 15 months with no racking (transfers to new barrels), a minimum of sulfur added, and no filtering or fining. This earthy, structured blend tastes like a fine crust of fresh baked bread with vibrant black currant and blackberry fruit.
Serving Suggestion: NZ rack of lamb in a red currant sauce. Beef tenderloin w/ mushroom duxelles. Duck confit. Crispy potatoes roasted in miso butter w/ sesame seeds.
