BOLD LIME, YEASTY & RICH, CHISELED BUT SOFT
This Blanc de Blancs (white wine from white grapes – in this case, Chardonnay) is racy and very rich but still easy-going enough to serve as a sub for mystifyingly overpriced mega-production staples like Veuve Clicqout. Unlike the factory wines which dominate the world of Champagne today, this is handmade in minute quantities by a small, independent, family-owned vigneron. Mmmmm, the limey character and vibrant acidity are powerful and almost crystaline. Substantially more impressive than the refreshingly reasonable price might indicate!
Serving Suggestion: The classic pairing is with a triple cream cheese, but we’ll go out on a limb and recommend it with Pigs in Blanket – made with brioche and quality charcuterie, of course.
