Caliza is Spanish for limestone, and it’s the soil in which the old vines for this very special wine are planted. A single vineyard parcel called “La Parada de Tordos” (Thrush stop) at Los Frailes and its limestone soils contribute subtlety, elegance, and age-ability to this wine. Following the heritage of the monastery that originally planted this vineyard, this wine is made using their 13th century fermentation amphorae.
Serving Suggestion: A paella with rabbit or any other rich game animal. Grilled steak sprinkled with fleur de sel and drizzled with extra virgin olive oil.
