Pablo Fallabrino’s estate is situated in the coastal town Atlantida, where the River Plate estuary (the widest river in the world) meets the Atlantic Ocean, an ideal spot for a laid back surfer dude like Pablo but also for his vines, as they benefit from the cooler climate and coastal breezes. The chardonnay is harvested early for this blend to provide higher acidity and balance the flavors of the fully ripe gewürztraminer and the late harvested moscato bianco, producing a beautifully balanced, thought provoking wine.
Serving Suggestion: Tofu bánh mì. Oyster po’ boys w/ a side of creamy radish and cucumber salad. Turkey club roulades.
