Pablo Fallabrino established this single vineyard estate in 1997 with his father and grandfather after many years of studying under them and learning the trade. Today the estate has 12 hectares under vine, planted mostly with Piedmontese varieties (Pablo’s grandfather immigrated here from Italy in 1920) aside from tannat, which despite having originated in southwestern France, has made itself quite at home, now being the most widely planted grape in Uruguay.
Serving Suggestion: Enchiladas verdes. Rosemary braised lamb shanks. Grilled eggplant w/ lemon aioli.
