Steffan Jorgensen may be Danish born and raised, but he’s taken like a fish to water making wine in Chile’s Elqui Valley. He’s farming some of the more intense vineyard sites in Chile (which is saying a lot…Chile’s pretty extreme!) to produce this cuvée. Starring Chile’s golden child variety, Carménère, alongside somewhat unsurprising partners in crime, Malbec and Syrah. It just works- big and bold, yes, but also suave, silky, packed with rich flavor and dark, fleshy fruit.
Serving Suggestion: Empanadas de pino. Pernil w/ tostones & arroz con gandules. Beef Bourguignon. Tacos de lengua on warm corn tortillas & topped w/ onion and cilantro.
