Have you ever had a wine that’s passed through a drunk turtle? You will! Drunk Turtle is an amphora maker who have revived an ancient Roman recipe for making an amphora, and Alexandre Cady chose to use one to slowly age this beautiful dry Chenin Blanc on its lees. Sharp green apple and fresh citrus accent the rich honeyed aroma, while bright mineral flavors and zesty acidity keep it fresh and not cloying.
Serving Suggestion: Baked perch w/ lemony beurre blanc & fresh tarragon. Gemelli tossed in a creamy, garlicky Funghi sauce w/ fresh thyme. A wedge of Mimolette, eaten like a slice of watermelon.
