Arnaud Baur is proud of his organic vineyards in Alsace, where organic isn’t the norm. He points to the brown, lifeless rows of his neighbor’s non-organic vineyards, a stark contrast to his vibrantly green vines. A Pinot Noir from Alsace, despite being the region’s most significant red grape, is something we don’t see every day. Historically it’s been too cold here to ripen red grapes, but as the world warms, spots like this are increasingly producing delicate reds.
Serving suggestion: Wintery fare: choucroute garnie (sauerkraut, sausage & potatoes in white wine) or a holiday feast w/ a roast bird & root veggies.
