Carlos Aliaga’s propensity towards francophiledelic winemaking techniques exemplified once again resulting in delicate mineral and perfume meet bright red fruit and complexity garnered from very old Garnacha vines.
Serving Suggestion: Truchas a la Navarra (whole trout stuffed w/ jamón serrano) fried until crispy, sprinkled w/ lemon juice and parsley. Barbacoa lamb tacos topped w/ tomatillo salsa.
