Sankt Laurent’s rise (or return) to relevance over the last two decades can be almost exclusively attributed to efforts in the Burgenland corner of Austria. It’s perhaps more familiar as one of the lesser-known parent of Zweigelt (with Blaufränkisch) than for its own achievements, but this rendition from Paul Achs is a splendid reaffirmation of the grape’s merits. Gentle astringency and assertive, food-friendly acidity make this a masterful companion to food.
Serving Suggestion: Seared chicken livers w/ caramelized shallots & horseradish mustard sauce. Potato pancakes w/ sour cream, dill, & pickled beets.
